Foodie Friday: Ramona's Hummus makes your favorite snack a full-on entrée

Most Americans who eat hummus enjoy it as a snack. But that wasn't the initial intent when it originated in the Middle East. Now, you can enjoy hummus as it is supposed to be eaten at Ramona's Hummus food truck in Austin.

AUSTIN — An Austin food truck aims to make a popular snack a lot more filling.

Hummus -- the simple dip of mashed chickpeas, spices and olive oil -- has many Americans obsessed. It comes in all sorts of flavors and a new local food truck has the perfect recipe down pat.

Most Americans who eat hummus enjoy it as a snack. But that wasn't the initial intent when it originated in the Middle East.

"Traditionally it is served as a meal unto itself and we wanted to bring some of that to Austin," said chef Will Elman.

A bold concept for a bright yellow truck. The name on the side is a nod to family friend, Ramona.

"She makes some of the best hummus I've ever had and so I thought it was only fitting to name it after her," Elman said.

No trip to Ramona's Hummus would be complete without their signature item: The hummus bowl.

"We go really heavy on the tahini which gives it this kind of light, creamy, texture and color," he said.

A popular bowl topping is their beef shawarma.

While Ramona certainly inspired Elman to start up his own business, with time he developed his own hummus recipe.

"I just played with a bunch of different recipes that I found online and in cook books, what I saw in the Mideast in terms of the methods being prepared and really just crafted it to my taste," Elman said.

And nothing is tastier than their falafels made from scratch.

"We add a ton of herbs so when you bite into it, it's bright green," he said.

Their salad bowl is another favorite. Their version is somewhat untraditional. This salad doesn't come with lettuce or tomatoes. Instead, it comes with some cabbage, carrots, cucumbers, avocado, pumpkin seeds, walnuts, a boiled egg and hummus!

Full yet? Don't forget to save some room for the loaded fries. Their fries are hand cut, made from scratch and topped with grilled onions, pickles, cilantro and jalapenos.

And let's not forget one final ingredient.

"No dish at Ramona's would be complete without hummus so we add a little bit on the side for some dipping," Elman said.

And before you leave be sure to wash it all down with a mint lemonade made fresh to order!
