AUSTIN – The food truck trend exploded in Austin more than a decade ago, and The Peached Tortilla is one of the restaurants that saw such success it expanded to a brick-and-mortar location.
Before Eric Silverstein opened the Asian fusion restaurant in 2010, he was in the courtroom.
“A partner at my law firm came in and said ‘I'm advising my kid to go into business school and not be a lawyer,’ and at that point the light bulb kind of turned on and I was like ‘Man, I’m not that happy doing this, this guy is not that happy doing this- this is me 20 years from now,’” Silverstein said.
While ‘The Peached Tortilla’ food trucks are street food-centric for lunch, dinner meals feature some foodie favorites with a twist. Southern Fun is a modern take on Chow fun, a Chinese noodle dish. Instead of Chinese marinated-style beef, this plate comes with brisket.
Eric was born in Tokyo to a Chinese mom and Jewish-American dad, and says his diverse upbringing has shaped who he is as a chef.
“If I want to test a new concept out, I can do it. I’m only inhibited by my own intuition,” he said.
In addition to the brick-and-mortar location on Burnet Road, Peached Tortilla has several food trucks and a bustling catering company. Eric is in the process of writing a memoir cookbook, due out in March 2019.
