Take This Job: Butcher

Bryan Mays heads to Salt & Time to see how the meat cutting process works with Butcher Bryan Butler.

Many people enjoy the holidays because they can spend time with friends and family, have a few days off, and to eat some really good food. Plenty of butchers work in Austin, including one that the Texas Beef Council named the “Best Butcher in Texas” earlier this year.

Bryan Butler has been at Salt & Time since 2013, and Bryan Mays joined him to see how he crafts his cuts of meat for sale. Watch the video above for Bryan’s full experience.

Butler has been selected to be one of the six members for Team USA at the World Butchers’ Challenge, which will take place March 20-22, 2018 in Belfast, Ireland. The Butchers Guild said in June that Butler will join butchers from California, South Carolina and Virginia on “Butchers of America.” The team does have a GoFundMe page to assist in travel expenses for practice runs and for travel to Belfast next year.
